As I dip my toes back into the Weight Watchers pond, I am discovering what meals work will work for me and my family. Since WW has changed since I last followed their program I am looking for and dreaming up new recipes that will inspire me to stay on my path. Beans are now a zero point food, as is 99% fat free ground turkey, plus veggies and several other foods. I made a delicious turkey chili last week (found on Pinterest) and I decided to try my hand on creating my first recipe. I had heard about burrito bowls and I do make them often, but my challenge would be to see if I could create my own zero point burrito bowl. I deliberately did not look up any recipes from this, as I wanted to see if I could use the zero smart point food list to create my own one. I made black beans in my instant pot (so easy — thanks to Dextonista). Usually I would make my salsa chicken or salsa verde chicken in my instant pot, but I was running out of time. I just browned my 99% fat free ground turkey meat in my Copper Chef pan with some onions and added 1/2 a jar of mild Salsa Verde (because I was low on regular mild salsa). I let it simmer for a while. Next time I will make this in my Instant Pot first. Then I sauteed some zucchini and onions. I shredded lettuce, set out plain yogurt, and then drained a can of corn. Looks amazing, right? Here’s what I used for my bowl.
And here is my finished bowl.
Now you may say — but what about my family, they aren’t following WW?
No, my family is not planning on following WW at all. But for me, it’s the right choice.
For my family, I made rice (which only my husband ate) and then set out tortilla chips, guac and cheese. It’s really important of me to have an eating plan that I can also use for my family (even if I add some ingredients for them that I am not going to eat).
I decided I didn’t want to add any points to my bowl because I was at my limit for the day, but I totally could figure out the smart points for any ingredients I wanted.
So, ready to make this? How would you customize your bowl?
