Instructions
Make a marinade for the chicken - add 5 tablespoons of light tasting olive oil, 4 tablespoons apple cider vinegar, and 2 tablespoons lemon juice. Whisk together and marinate chicken.
While chicken is marinating, chop up veggies.
Take a zippered bag and add a teaspoon of olive oil and one vegetable at a time. Close the bag and thoroughly coat the veggies.
Arrange the veggies on a baking sheet, on top of parchment paper. Repeat with each veggie. Place the marinated chicken onto the parchment paper.
Sprinkle with Mediterranean Seasoning and Everything Bagel Seasoning.
Put in the oven for 20 minutes at 375 degrees and then turn oven onto low broil for more 5 minutes. If you plan to serve this with whole grain pasta or rice, start making it now.
Remove veggies and keep chicken in oven for 7 more minutes on high broil.
I moved the chicken and veggies over to a pretty platter and served alongside whole grain pasta. I do believe that even picky kids will eat something that looks attractive and this fits the bill! This will keep for around 2 days or so and my family loved it! You can even sprinkle cheese on top of it (I chose not to).
Notes
You can serve over rice also. For my very very picky eater - my 9 year old son, I served him the chicken with broccoli over the pasta with a little cheese sprinkled on top. He's just not a bell pepper fan, even if the rest of my family loves them.If you want, you can double the amount of chicken you use to 2 packages.
