2Bell Peppers
1small yellow onion
4Whole Wheat Tortillas
Cheese to tasteI used a cheddar mix for my family and a cheddar vegan cheese for me
Olive Oil Non-propellant spray or Extra Virgin Olive Oilwhatever you prefer
Guac Optional
SalsaOptional

Instructions
Cut up your peppers and your onions. Lay on a silicone mat or some perforated parchment paper on your air fryer tray (or use the basket).
Roast your peppers and onions at 400 degrees Fahrenheit for 6-9 minutes. If you make a smaller amount, you'd need less time.
When your peppers and onions are roasted, take them off your tray and then place your tortillas on the tray, folding them in half and kind of leaning on each other. Place your pepper and onion filling inside and then add your shredded cheese of choice inside.
Place back into your air fryer for 3-5 minutes.
Cut up and serve.
I like to use a pizza cutter to slice up my quesadillas.
You can add more protein to this like beans or chicken, beef or turkey. Sometimes I just add in veggies to this like mushrooms or tomatoes.
