When I was growing up, I loved eating my sandwiches with mayo. Now, as an adult, I typically stay away from it, for fat and cholesterol reasons. But there’s another thing. With all the food I buy for my family, I try to avoid GMO’s as much as possible. It’s really important to me to do the best I can for them.
When Hampton Creek approached me to so check out their Just Mayo , I was intrigued. A healthier version of the mayo and no GMO’s? I was intrigued. Plus there are no eggs, so it’s perfect for people who have egg allergies or want to stay clear of eggs (like vegans).
Now, it’s not a low fat food. There’s still 10 grams of fat in a tablespoon (1 g saturated). But there’s no egg (in mayonaise, egg acts like an emulsiflier – holding the rest of the ingredients together). Hampton Creek has been developing plant based egg alternatives (their back story is actually pretty interesting). The egg alternative in Just Mayo is a pea protein.
The mission of Hampton Creek is to bring healthy and affordable food to everyone, everywhere. The company received the Best of What’s New 2013 Grand Award by Popular Science for their “plant-based egg.” Hampton Creek’s partners include The Humane Society of the United States and Global Viral, an organization dedicated to addressing the world’s most pressing infectious disease threats. Josh Tetrick, a Fulbright Scholar and former college football player, co-founded Hampton Creek in 2011 after spending seven years working in Sub-Saharan Africa with the President of Liberia and the United Nations, among other initiatives.
Right now, Just Mayo comes in several flavors — regular, garlic, sriracha, and chipotle. The taste? Really fresh and delicious. Honestly, it was the best mayo that I’ve ever had. My husband and children loved it too. I was out with my toddler and had been planning to create a dinner with Just Mayo, when I got a text from my husband saying that he opened the bottle and made a sandwich and topped it with the Garlic Just Mayo. He took a picture of course (I’ve trained him well).
Just Mayo uses a pea protein to replace the eggs. The taste? Really delicious actually. I’m a HUGE fan of garlic, so I was excited that I got to try that also. I’m not as knowledgeable about Sriracha — but if you’re a fan or like spicier foods, you’re going to be happy.
The mission that I gave myself: not just to try Just Mayo, but to see if I can incorporate it into our family dinner. I decided to bread wild flounder that I had bought frozen. Frozen fish is sometimes a gamble, so I wasn’t sure how it would turn out.
I took a popular way to bread fish and chicken and used Just Mayo (regular flavor) to coat my fish (lightly, of course) and then I dusted the coated fish in breadcrumbs. I put some EVOO in my pan (using the Racheal Ray way of “Once Around The Pan”) and cooked the fish.
The smell was incredible.
While that was cooking, my husband made Broccoli Slaw.
Which was simply the Organic Broccoli Slaw from Trader Joe’s, two tablespoons of Just Mayo, and one teaspoon of Garlic Just Mayo.
Finally, I roasted butternut squash at 400 degrees in the oven.
I served the breaded fish, broccoli slaw, and roasted butternut squash (with a little Just Mayo on the side for dipping).
It was such a hit!
Even Picky Eater 2.0 liked it.
Verdict: My family and I are converts — Just Mayo tasted delicious and super fresh.

I just love how you made such a nice, healthy meal with mayo on top! I lived on mayo and french fries when I traveled through Europe, If only Hampton Creek existed I wouldn’t have gained so much weight LOL! I would love to try that recipe at home too.
