I love lemons and I’ve been obsessed with making the perfect lemon roasted chicken forever. I had thought I had it down (pinterest made it look so easy). Then I spoke to my office manager at work and he told me to marinate the chicken overnight. It made a huge difference and turned my lemon roasted chicken from drab to fab!
First, cut up a couple of lemons.
Then de-skin your chicken. I try to use an organic or at least a kosher chicken (I just feel that it’s better for my family). Warning– this isn’t as pretty.
I try to cut off as much fat as possible.
Then rub a little extra virgin olive oil on your chicken, then place the lemon slices on top of the chicken and pour lemon juice over it. Let this sit overnight. I plunked it on my stockpot (no pics, sorry).
The next day, I decided to roast it in the oven, instead of using my slow cooker. I love my slow cooker, but I wanted to see if it tasted better roasting in my oven (and it did, it really did). I arranged the chicken and lemon slices in a roasting pan, sprinkled with some paprika and covered it with foil to keep it juicy. It was super easy and quick (which is my perfect recipe), especially now that I’m back at work and do not have the time to cook like I did before.
Roasted it at 350 for 2 hours and then pulled the foil off to crisp it up for another 20 minutes.
And it was amazing.
The Best Lemon Chicken Ever!
Ingredients
- 2 Tbs olive oil
- 2 lemons
- 2 cups lemon juice
- 1 organic or kosher chicken
Instructions
- Cut up lemons
- De-skin chicken and put the olive oil on it
- Put chicken to marinate overnight in lemon juice
- The next day, sprinkle paprika on chicken and take the marinated lemons and place on the chicken.
- Cover the chicken in foil and roast on 350 degrees for 2 hours. Take foil off and cook another 20 minutes or so (until the chicken is a little browner).
I served it with baked potatoes and steamed cauliflower. If you want to continue the lemon theme, you could do a lemony roasted vegetables and potatoes. This is gluten free and dairy free — it’s really just lemon juice, oil olive, paprika, and chicken. Simple and oh so good!
