One of the foods my family will always eat is roasted chicken, even my youngest child, who is our current super picky eater. I’m still experimenting the best way to make it, but adding a good herb mix can be a delicious thing. While I wasn’t able to attend the ShiftCon Conference, I was asked if I’d like to try some of the fantastic natural products that were shown at the conference. Mountain Rose Herbs sent me three of their Epicurean Organics spice blends: Smoked Sea Salt, Mediterranean Seasoning, and Grilling Herbs. I decided to try to add these spices to my roast chicken repertoire. Simple Roasted Chicken with Mediterranean Seasoning
I decided to try the Mediterranean Seasoning (MSRP $4.90) with my roast chicken. It contains organic oregano, organic garlic, organic rosemary, organic fennel, and organic thyme.
I took a cut up organic chicken, took the skin off, added a little olive oil, lemon, and then added some Mediterranean Seasoning sprinkled on top. Simple, easy and delicious. I roasted this in my oven at 400 degrees for 45 minutes (keeping an eye on it to make sure it didn’t overcook). I served it with brown basmati rice (from my instant pot, of course), some warmed up pinto beans, and sauteed plantains (take plantains, cut up, saute in some EVOO, and add cinnamon). So amazing!
In fact, we liked it so much I made it again the next night with drumsticks. I may have used a little too much Mediterranean seasoning, so use a lighter hand than I did!
If you want to make a simple roasted chicken, then the Mediterranean Seasoning will make this utterly enchanting. If you can’t get Epicurean Organics, then use this one from Amazon.
Simple Roasted Chicken with Mediterranean Seasoning
Equipment

Ingredients
- Cut up organic chicken take the skin off
- Extra virgin olive oil to taste .
- Add lemon to taste
Add Mediterranean Seasoning to taste
Instructions
- Cut up an organic chicken, take the the skin off, Rub on little olive oil, lemon, and then add some Mediterranean Seasoning sprinkled on top.
- Roasted your oven at 400 degrees for 45 minutes (keeping an eye on it to make sure it dosen't overcook).
- I served it with brown basmati rice (from my instant pot, of course), some warmed up pinto beans, and sauteed plantains (take plantains, cut up, saute in some EVOO, and add cinnamon). So amazing!
I added the Smoked Sea Salt to my Turkey Meatloaf (find that recipe here and sub in the Smoked Sea Salt in the place of regular salt) and it added a little kick.
It was terrific.
