As I’ve mentioned many times I really love sheet pan dinners because they are so easy and packed with flavor. I made a sheet pan meal with salmon, asparagus, and tomatoes and it was so delicious! Flavored with some garlic and lime, this was packed with flavor. You’re only going to need lime juice, garlic, your main ingredients (salmon, asparagus, and tomatoes), oil spray or olive oil and some spices.
This is naturally gluten free, but as a rule, make sure your olive oil spray does not contain gluten. The brand that is my go-to – Pompeian, is naturally gluten free. Enjoy this Sheet Pan Meal of Garlic Lime Salmon, Aspargus, and Tomatoes! And of course, it’s Gluten Free!
Ingredients:
Salmon fillets (I made 4 fillets) – I prefer to buy wild salmon
Asparagus – 2 bunches or two pounds
Grape tomatoes – 1 cup
Olive oil cooking spray or Olive Oil
Mediterranean Seasoning – if you can’t get that, use some oregano, garlic, rosemary, fennel seeds, and thyme
Lime Juice – I used ReaLime – around a 1/2 cup
Instructions:
Preheat your oven at 425 Degrees Farenheit.
Prep your salmon and place it on a lined baking sheet. I usually do tinfoil with parchment on top or a silicone baking mat. I usually cut a large piece of salmon up. This way I can control the portions (my husband eats more than my two younger kids).
Place some sliced garlic on top. I always keep garlic cubes in my freezer, but recently I bought some fresh garlic and we’ve been using that all up. I love garlic, do you?
Then drizzle with some of the lime juice (a little more than 1/4 of the 1/2 cup you have).
Then prep your veggies by washing them well and then spraying with olive oil spray (or drizzle with olive oil). I also added some lime juice (around a 1/4 of a cup) and some Mediterranean Seasoning.
This recipe is that simple.
Place in your oven for 15 minutes. Check if your salmon is done and your veggies are roasted. My asparagus wasn’t quite done, so I took off the salmon and the tomatoes and put the asparagus back in for around 5-6 minutes.
I served this with an air fried sweet potato – quick directions for that:
Air Fryer Sweet Potatoes
Clean your sweet potatoes and spray or drizzle with olive oil. Place in your air fryer for 45 minutes at 400 Degrees Farenheit. It will be like buttah when you’re done.
This was delicious and my family loved it (except my oldest child who wasn’t “Feeling” Salmon or Asparagus that day. Hey, it happens. So I let him put together his own dinner (he took leftover chicken, challah, a sweet potato and cucumbers).
