Did you know you can get amazing fresh local produce at Walmart? I’ve shopped at Walmart for a long time now and I love to create meals by visiting Walmart’s produce section and getting inspired by what I find. You can find organic and locally grown produce in Walmart stores. Locally grown, if you weren’t aware, means produce that was bought and sold right in the same state. Supporting local farms and farmers is very important and allows Walmart not only to just positively impact the economy, but also offer their customers incredibly fresh, high quality produce. And did you know that Walmart supports thousands of American farms and farmers? Recently, I attended their Rediscovering America event, a relaunched Walmart program highlighting the importance of supporting organic and locally-grown produce right here in our backyard.
Rediscovering America tasks nine celebrated chefs from across the country to feature fresh, affordable fruits and vegetables from Walmart on their own menus. At the event, I learned that it’s possible to create delicious meals and flavors when you simply have great ingredients.
For example, we were served these delicious bites, all made from fresh locally-grown and organic produce from Walmart.
I was so inspired from meeting some of the featured chefs, like Chef Maribel and Chef Justin Beckett, that I gathered a bunch of beautiful produce from this event and took it home to create a recipe for my family.
You can easily make this sheet pan dinner in 40 minutes or so and serve chicken and veggies on their own, or with whole wheat pasta or rice.
This is what I created:
Sheet Pan Dinner: Roasted Chicken and Rainbow Veggies
You’ll need:
1 package chicken tenders or chicken breasts, cut in thin strips (1 lb)
2 heads of broccoli
1 orange pepper
1 red pepper
1 yellow pepper
Lemon juice
Everything Bagel Seasoning
Great Value Organic Mediterranean Style Garlic & Herb Grinder, 3 oz
(or you can use rosemary, cumin, coriander, thyme, and oregano)
Great-Value-Organic-Raw-Unfiltered-Apple-Cider-Vinegar-32-fl-oz
Great Value Light Tasting Olive Oil
(2 pack) Great Value Double Zipper Storage Bags, Mega Pack
Great Value Non-Stick Parchment Paper, 60 sq ft
Instructions:
Make a marinade for the chicken – add 5 tablespoons of light tasting olive oil, 4 tablespoons apple cider vinegar, and 2 tablespoons lemon juice. Whisk together and marinate chicken.
While chicken is marinating, chop up veggies.
Take a zippered bag and add a teaspoon of olive oil and one vegetable at a time. Close the bag and thoroughly coat the veggies.
Arrange the veggies on a baking sheet, on top of parchment paper. Repeat with each veggie. Place the marinated chicken onto the parchment paper.
Sprinkle with Mediterranean Seasoning and Everything Bagel Seasoning.
Put in the oven for 20 minutes at 375 degrees and then turn oven onto low broil for more 5 minutes. If you plan to serve this with whole grain pasta or rice, start making it now.
Remove veggies and keep chicken in oven for 7 more minutes on high broil.
I moved the chicken and veggies over to a pretty platter and served alongside whole grain pasta. I do believe that even picky kids will eat something that looks attractive and this fits the bill! This will keep for around 2 days or so and my family loved it! You can even sprinkle cheese on top of it (I chose not to).
You can serve over rice also.
For my very very picky eater – my 9 year old son, I served him the chicken with broccoli over the pasta with a little cheese sprinkled on top. He’s just not a pepper fan, even if the rest of my family loves them.
If you want, you can double the amount of chicken you use to 2 packages.
