To celebrate that the Super Bowl will be in nearby Indianapolis in 2012, Red Gold Tomatoes in Indiana will choose seven bloggers from around the country for an all-expenses paid trip to join them at Taste of the NFL in Indy as well as at their HQ to learn all about growing and cooking exceptional tomatoes during a weekend of great cuisine. In our neck of the woods, NYC, they also sell under the name Red Pack.
They asked me to write about how I use canned tomatoes for this contest. While I’m not the biggest fan of football, I do use canned tomatoes — I usually keep a few cans of diced or crushed Red Pack Tomatoes on hand as a pantry staple. Plus, my picky eater will eat actually eat them (and my daughter loves anything tomato).
1. I add it to my Go-to Turkey Chili recipe to add some chunkiness to the sauce.
2. I use diced tomatoes to top my healthy nachos, with black beans, blue corn chips and reduced fat cheddar cheese. They taste amazing and I love that the tomatoes “kick it up a notch”, as Emeril would say.
3. I add it to my spaghetti and meatballs recipe. I don’t have time to make meatballs anymore, so I buy Trader Joe’s Turkey Meatballs and I find that the crushed whole tomatoes make the jarred tomato sauce I use tastier.
4. I add it to egg white scrambles in the morning with some spinach.
