My husband was diagnosed with Celiac Disease in the middle of this pandemic. And while I’ve discussed that I am really not much of a baker, I want to be able to make gluten free treats for him. While everyone was getting ready for lockdown, I had stocked my pantry with two important items – Maple Grove Farms Gluten Free Pancake and Waffle Mix, as well as Maple Grove Farms 100% Pure Maple Syrup. I planned to make pancakes and waffles, but as the pandemic stretched on and I started trying to cook and bake more, I decided that I would try to make gluten free muffins using Maple Grove Farms Gluten Free Pancake and Waffle Mix. I always need simple and I’ve made muffins before from regular pancake mix, but would it work with a gluten free mix? I always stock Clabber Girl Baking Powder (and was excited to see that it’s gluten free), as well as Spice Islands Cinnamon, so I knew I could add them to my muffins. I love making muffins, so read on to see what happened.
When I was stocking up my pantry in early March, I saw that they had a gluten free pancake and waffle mix at my local supermarket and I snapped it up. I usually buy one of their regular pancake and waffle mixes, so I figured their gluten free pancake and waffle mix was going to taste just as good (and I was right). I’ve been trying to cook and bake more, but gluten free baking has been a lot harder than I’ve thought. All products aren’t the same and I’ve had a few fails. I needed a good go-to muffin recipe for my husband and I think you’ll like what I came up with.
These Gluten Free Apple Cinnamon Muffins are easy to make (which is a must for me – I fail when I make something really complicated) and you’ll have most of these ingredients in your pantry already. Now, my husband has Celiac, even though he has no symptoms, so I am trying to be extra vigilant on what gluten free products I make for him – Maple Grove’s Gluten Free Pancake and Waffle Mix is manufactured on dedicated Gluten Free equipment in a Gluten Free room, in a facility that processes dairy products, egg powder, soy and wheat. Being that we are at the beginning of our gluten free journey, making sure that foods are certified gluten free and knowing how it is made is important to me.
There is xanthan gum in the Gluten Free Pancake and Waffle Mix, which helps to make sure everything rises. These muffins are on the smaller size, so my husband has been eating them two at a time!
You’ll Need:
1.5 cups Maple Grove Farms Gluten Free Pancake and Waffle Mix. If you aren’t gluten free and still want to make this, sub in ANY Maple Grove Farms Pancake and Waffle Mix.
2 tbsps Maple Grove Farms 100% Pure Maple Syrup (yes, the 100% maple syrup totally makes this)
1 tbsp Cinnamon (I like Spice Islands Cinnamon)
1 Apple (I like to use Gala or Fiji, if possible)
1 tbsp Baking Powder (I like Clabber Girl – which is gluten free) – this will help the muffins to rise.
1 cup unsweetened applesauce (instead of oil)
2 Eggs, beaten
1/2 cup water
Instructions:
Preheat oven at 350 degrees Farenheit.
Combine all ingredients in a bowl, mix well.
Pour into muffin pan.
This will make 12 muffins. Bake for 30 minutes.
Make sure muffins are done by pricking with a knife.
Serve! Note, these are small muffins, so my husband enjoyed two at a time!

- 1 tbsp Cinnamon (I like Spice Islands Cinnamon)
- 1 Apple
- 2 tbsp Baking Powder (I like Clabber Girl – which is gluten free) This will help the muffins to rise
- 1 cup unsweetened applesauce (instead of oil)
- 2 eggs, beaten Beat before you put into mixture
- 1/2 cup water
- 1 tsp vanilla extract
Instructions
- Preheat oven at 350 degrees Farenheit. Combine all ingredients in a bowl, mix well. Pour into muffin pan. This will make 12 muffins. Bake for 30 minutes.

I don’t have a need for gluten free so I’ve never tried making anything like this but it looks very good. I may just try it just to see the results.
