Several months ago I tried protein energy bites and loved them. To me, they tasted exactly like chocolate chip cookie dough — yum! But, they were packed with oat and flax — and safe to eat! So I decided to try to make my own. I try to make this as organic as I can. No Bake Oatmeal Chocolate Chip Energy Bites

You’ll need:
1 cup organic rolled oats
1/2 cup organic ground flaxseed meal
1/3 cup maple syrup (if you use honey, it’s not vegan anymore)
1/2 cup chocolate chips (I used mini ones)
1/2 cup smooth peanut butter (can substitute almond butter)
1 tbsp vanilla extract
Can also add in nuts, cinnamon, raisins, etc..

Instructions:
Add together all ingredients in a big bowl and mix. It will be very sticky – kids will love helping! Form into 1 inch (in diameter) balls using your hands. You will have to wash your hands repeatedly, as it gets messy. Arrange the bites on parchment paper and free one hour until set.

Keep in the fridge for a week or so.

If you are carb counting, it works out to 9.5 carbs per ball. You can sub in Gluten Free certified oats if you cannot have gluten.

No Bake Oatmeal Chocolate Chip Energy Bites
Ingredients

- 1/2 cup smooth peanut butter can substitute almond butter
- 1 tbsp vanilla extract
- Can also add in nuts cinnamon, raisins, etc..
Instructions
- Add together all ingredients in a big bowl and mix. It will be very sticky - kids will love helping! Form into 1 inch (in diameter) balls using your hands.
- Start making your balls by wetting your hands first.
- Arrange the bites on parchment paper and freeze for one hour until set. Keep in the fridge for a week or so. They will be soft and easy to eat. And delicious!
- If you are carb counting, it works out to 9.5 carbs per ball.

I love chocolate chip cookies and would love to make these protein energy bites, but I am not a fan of getting my hands messy so I may ask my nephew to help me with it. It would be a great treat for a birthday party and family get together.
