I’ve mentioned it before, I’m really not much of a birthday party fan or baker – but when it comes to my kids birthday celebrations, I go the extra mile. Though, I wish it was a little easier to plan celebrations. Here’s where Netflix comes in. So, Netflix sent us a little cake kit to make our own cake. Red Velvet to be exact. Now you don’t have to use Netflix branded cake mix or frosting, any kind will do if you want to make some cupcakes because you’re craving them now.
Since we’ve been dealing with my oldest kid’s Type 1 Diabetes diagnosis, I’ve been a little wary of cakes. However, if we plan for him having cake, it’s totally doable! Because I knew the carb count for cupcakes (30 carbs for a small one without frosting and 60 carbs for small one with frosting), I opted to make cupcakes.
I pulled out my trusty Kitchen Aid and got to work.

My son was thrilled with his cupcake! Carb count for one little cupcake with frosting is 60 carbs (gulp!), but we planned for that.
