He also made a Mexican-inspired Pizza Muffin with salsa and cheddar cheese. These were my favorite! So good!

There are four varieties of Bays English Muffins: Original, Honey Wheat, Sourdough, and Multi-Grain. You can find them in your grocer’s refrigerator case (may be found near eggs, butter or refrigerated dough). They’re great to always have them on hand for a quick meal or snack!
Here’s a great recipe for BBQ Chicken Pizza Muffins
Ingredients
3/4 cup barbecue sauce
1 cup shredded cooked chicken
1/3 cup shredded smoked gouda cheese
1/3 cup shredded mozzarella cheese
4 BAYS English Muffins, any variety, split, untoasted
1 tablespoon finely chopped red onion
1 tablespoon chopped cilantro
Instructions
Preheat oven to 400° F.
Mix barbecue sauce and chicken in medium bowl. Mix cheeses in small bowl.
Place muffin halves on baking sheet. Top evenly with chicken mixture; sprinkle with onion and cheese.
Bake 12 to 14 minutes or until cheese is melted and lightly browned.
Sprinkle with cilantro.
Serves: 4

Ooooh, the Mexican English Muffin Pizza sounds delish! We’ve made traditional English Muffin Pizzas in the classroom with preschoolers and they are always a big hit. Kids love helping prepare food! I especially like the prosciutto and fig recipe. I also remember another easy English Muffin recipe growing up that called for a crabmeat and cheddar mixture. We used to call them “Crabbies” and they made a great appetizer!

Oh my gosh! Your BBQ pizza english muffin recipe has my mouth watering with that gouda cheese ontop, yum! We have made basic tomato sauce and cheese english muffins in the past, I’m not sure why it never occured to us to think outside the box. Thanks for all the ideas!

My kids love pizza – this idea with the Bay Muffins looks easy and delicious! Since we keepmkosher, I’d either do just cheese or cheese with tofu type meat – or meat with melted Daiya Cheese or Tofutti cheese.
