Last week, Kim of Made by Mommy introduced Esti of Primetime Parenting and I to something really cool — the Imperial Spherificator! We spoke to Naor Cohen who showed us how to turn almost any food into caviar pearls (seriously).
Check out our video:
From the Spherificator’s website:
The Spherificator is the world’s first automatic caviar pearl former. The spherification process was discovered by mistake in the 1950’s by Unilever and was made extremely popular by renown chef Ferran Adria of Spain. Today the spherification technique was adopted by the Molecular Gastronomy community world wide.
Spherification is the culinary process of shaping a liquid into spheres which visually and texturally resemble caviar or pearls. You can produce pearls and caviar with a liquid center by using a reverse technique called Reverse Spherification.
The Spherificator is a hand held device that will produce up to around 22 lbs of pearls everyday. This is a great tool for foodies, chefs, bartenders and much more! As a mom to 2 children who are very picky eaters, the Spherificator could be the way to get them to eat more veggies. I tested the broccoli pearls in the video above. While I still tasted broccoli (which I happen to like), it went down smoother as pearls.
