A warm bowl of healthy, hearty soup is always welcome and I’ve got a recipe that ticks all the boxes: healthy, flavorful and filling, lots of plant-based protein, healthy carbs and antioxidants to boot! Best of all it only has five ingredients and is a cinch to make!
This soup uses brown lentils (find a good recipe for red lentil soup here).
Ingredients:
3 large sweet potatoes
1/2 cup baby carrots
1 large onion
2 cups brown lentils
3 heaping tbsp Better Than Bouillon Vegetable Base
Instructions:
Soak lentils for one hour (if no time to soak simply cook soup longer)
Peel sweet potatoes and cut into cubes, place in large pot (I use a 5 liter pot), add water almost to the top and turn on heat to high
Cut baby carrots into 4-5 slices and add to pot
Peel and chop onion, saute with a little oil in a frying pan. When brown add to pot.
Add lentils
When water boils add 3 tbsp Better Than Bouillon
Stir and simmer for 30 minutes. Check that sweet potatoes and lentils are soft and adjust flavor if needed. This will make 6 servings and is 7 WW SP per serving. If you want to bring the point value down, cut the amount of sweet potatoes used in half or use butternut squash, which is 0 points. That would take the soup down to 0 points.
Turn off heat and enjoy!
Note: If you don’t want the soup to come up too high you can either put less water or use 1 and 1/2 cups lentils instead of two.
Hearty Lentil Soup

Instructions
