If you’ve read my blog before, you know I just love tacos. Then again, who DOESN’T???? We made these delicious turkey and bean tacos using small corn tortillas during the Passover holiday at my in-laws house, and they were 7 WW SmartPoints for a serving, for 3 tacos. I decided to make this at home last week and trade in the vegetarian refried beans (1 SmartPoint) for the dark red red beans (0 SmartPoints) and use my points to have the three corn tacos (4 SmartPoints) and 1/4 cup of reduced fat cheddar cheese (2 SmartPoints). This was super simple to make and can be on the table in less than 20 minutes. Which is a win/win for me.
I’ve been doing the WW online plan and I love it. It’s the perfect time to start!
You’ll need:
Healthy DinneIdea: Turkey and Red Bean Tacos – 6 WW SmartPoints er Servin
99% Fat Free Ground Turkey
Red Peppers (2)
Onion
Cheddar Cheese (reduced fat)
Greek Yogurt
Canned Large Red Beans
Chunky Mild Salsa (get hotter if you like it)
Canned Corn (without salt added)
Corn Tortillas (you can have 3 of these for 4 WW SmartPoints)
Olive oil Spray or another type of oil spray (I usually use Pompeian)
Instructions:
Sauté ground turkey meat and when it’s not pink anymore, add 3/4 of a bottle of the chunky mild salsa and finish cooking the turkey meat. Drain and set aside. You can also use spices, but usually I will just grab mild salsa and give it some pep.
In a separate pan, sauté red peppers and onions in the olive oil spray until soft and slightly browned. You could substitute other veggies or kinds of peppers. Zucchini would be amazing in this!
Warm up corn tortillas and you can top with guac (optional), canned corn, salsa, and greek yogurt.
Serve! Customize it any way you want, but make sure you are using either low or zero SmartPoints foods! You know that Guac is always extra!

You can leave out the cheese and the points go down to 4 SmartPoints per serving!

My husband suffers with gout and can’t have a lot of red meat so I’m constantly looking for meals with ground turkey. These look delicious. And the best part — it’s healthy for me and flavorful for the kiddos! I’ll be adding this to my menu plan next week!
