I was never a big fan of cranberry sauce. However, at almost every big dinner at my parents’ house, there was a can of Ocean Spray Cranberry Sauce. When I met my husband, my mother-in-law actually made her own version, from scratch (I know, right?), using real cranberries. Oh, and it tastes SO MUCH I took the recipe from my mother-in-law and adapted it to make it in my trusty Instant Pot. My husband was thrilled! You’ll need:
12oz bag of cranberries (which is one bag of cranberries from the grocery store – I used Ocean Spray)
¾ cup raisins
1 1/4 cup sugar (if you want it tarter, omit a little of the sugar)
¾ tbsp cinnamon
1 1/8 Tsp ginger (I used a Dorot Ginger Cube and 1/8 of a cube)
¼ tsp whole cloves
1 cup water
1 small onion, chopped finely
2 medium Macintosh or Gala apples, pared and chopped
1 stick celery
Instructions
Put the first 7 ingredients into your Instant Pot (the cranberries, the raisins, the sugar, the cinnamon, ginger, cloves and water.
Mix and turn on your instant pot for 5 minutes, at manual pressure. After the timer goes off, let it sit for 5 minutes and then release the pressure.
If you don’t have an instant pot, cook the mixture for 15 min on stove.
Then add the onion, apples and celery. Mix it again and then put it on manual pressure for 7 minutes. After the timer goes off, let it sit for 5 minutes and then release the pressure.
Makes 6 servings.
If you don’t have an instant pot, let this simmer on the stove for 15 minutes more.
Your house will smell amazing. You can make this a few days ahead of time. If it’s too thick, add some water. This is served cold or room temperature.
