Air Fryer Eggplant Fries with Marinara Dipping Sauce are a delicious treat and is easily whipped up. It’s perfect for a side dish, snack, or the main event.
Ingredients:
For Fries:
1 large eggplant
1 cup breadcrumbs (or panko breadcrumbs for extra crispiness)
2 eggs, beaten
Olive Oil non-propellant cooking spray
For Marinara Dipping Sauce
Marinara sauce ( I like this brand or this brand)
1/4 cup grated parmesan cheese (add more if you really like parmesan)
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon smoked paprika (optional)
Salt and pepper, to taste
Instructions:
Preheat your Air Fryer to 425°F (218°C).
Peel and slice the eggplant into fry-shaped pieces, about 1/2 inch thick.
In a shallow bowl, combine the breadcrumbs and grated Parmesan cheese. Mix well to evenly distribute the seasonings.
In another shallow bowl, beat the eggs.
Dip each eggplant fry into the beaten eggs, shaking off any excess, then coat it evenly in the breadcrumb mixture. Repeat this process until all the eggplant fries are coated.
Lightly spray the Air Fryer tray or basket with a non propellant cooking spray or oil mister to prevent sticking. Place the coated eggplant fries in a single layer in the air fryer basket, making sure they are not touching each other.
Cook the eggplant fries in the Air Fryer for 18 minutes, flipping halfway through the cooking time, or until they are golden brown and crispy.
While the eggplant fries are cooking, heat the marinara sauce in a small saucepan over medium heat until warmed through. Add in spices and parmesan cheese.
Once the eggplant fries are done, remove them from the air fryer and transfer them to a serving plate.
Serve the crispy eggplant fries immediately with the warm marinara sauce for dipping.
