Right now I’m absolutely obsessed with these Air Fryer Veggie Quesadillas. Filled with bell peppers, onions, and cheese, you will be obsessed too. I make mine with vegan cheese to keep it totally plant based, but I use regular shredded cheddar cheese for my family. They are simple and quick to make! And I love making them in my Emeril Power Air Fryer 360. Read on to find out how to make these Air Fryer Veggie Quesadillas!
Right now I am eating primarily plant-based, so I use vegan cheese on mine. Any kind of vegan cheese that’s cheddar works. I like Daiya as well as Violife and the store brands that I’ve seen. The Trader Joe’s vegan cheeses are pretty good, so is Whole Foods’ vegan cheeses. But should you use shredded or sliced cheese? I think the shredded vegan cheeses work at little better to really get that cheese-like taste, but I’ve used sliced also and frankly didn’t notice much of. a different taste.
This works well for a lunch or dinner option. I’ve even made this for breakfast. My stomach doesn’t respond well to regular frying, so using my air fryer oven is just the perfect way for me to cook my veggie quesadillas!
You’ll Need:
2 Bell Peppers
1 small yellow onion
4 Whole Wheat Tortillas
Cheese to taste (I used a cheddar mix for my family and a cheddar vegan cheese for me)
Olive Oil Non-propellant spray or Extra Virgin Olive Oil (whatever you prefer)
Instructions:
Cut up your peppers and your onions. Lay on a silicone mat or some perforated parchment paper on your air fryer tray (or use the basket). I spray a little Olive Oil Non-propellant spray on this or lightly toss in Extra Virgin Olive Oil . Basically whatever you prefer.
Roast your peppers and onions at 400 degrees Fahrenheit for 6-9 minutes. If you make a smaller amount, you’d need less time.
When your peppers and onions are roasted, take them off your tray and then place your tortillas on the tray, folding them in half and kind of leaning on each other.
Place your pepper and onion filling inside and then add your shredded cheese of choice inside.
Place back into your air fryer for 3-5 minutes at 400 degrees Fahrenheit.
It is absolutely delicious!
Cut up and serve.
I like to use a pizza cutter to slice up my quesadillas.
You can add more protein to this like beans or chicken, beef or turkey. Sometimes I just add in veggies to this like mushrooms or tomatoes.
Top with guac or dip into salsa.
