We’re well into summer now, the days are getting hot and frankly, I don’t feel like standing in the hot kitchen cooking an elaborate meal. I won’t compromise and feed my family junk but I really could use a break! We’ve been fans of Ling Ling Vegetarian Eggrolls as a weekend treat but I recently discovered that Ling Ling now makes fried rice and they have a vegetarian option! This new line of frozen rice meals is inspired by Asian recipes from China, Korea, Japan, and Thailand. The dishes are Chinese-Style Vegetable, Yakitori Chicken, Yakiniku Beef, Thai-Style Chicken and Bibimbap Beef. We tried the Chinese-Style Vegetable Rice and it was a big hit with my family! It includes edamame, carrots, red bell pepper and fire roasted corn. My kids said it was like eating at a restaurant! The secret? The fried rice includes a soy sauce and every single grain of rice is infused with it, via a new infusion cooking method. This means a more flavorful dish that you can taste with every bite!

Each box comes in two packages, which are enough as a side dish for a family of five:
You can either microwave it or cook in a skillet for a crispier texture. I used a skillet and it was super-easy – I just heated a little oil and cooked for about ten minutes.
I served it with a salad for extra veggies, which I prepared while the rice was cooking so total prep time for this dinner was about ten minutes! I love that the meals are made with all-natural ingredients and have no preservatives or artificial flavors and colors. I tend to avoid prepared food when it has preservatives because it’s simply not good for you.
The rice plus the salad was a balanced meal that my kids thoroughly enjoyed and asked for second and third helpings. This is a great dish to bring for a potluck as well, as it’s not spicy but still has a lot of flavor that people can eat as a side dish.
