CSA’s are very popular these days and for a good reason: everyone wants fresh, locally-sourced produce. In reality, though, not everyone wants to make a weekly commitment to a CSA (community supported agriculture) because, frankly, there’s a lot of cooking and food preparation involved and sometimes us moms just want to not spend 40 minutes on dinner every day. But what if you could enjoy the benefits of a CSA without the weekly commitment? Peapod’s latest offering is a box with local, fresh produce that you can purchase whenever you wish and will get delivered straight to your door.
Here’s how it works: go to the Peapod website and simply put “farm box” in the search box, select the quantity, and it automatically gets added to your cart. I ordered a box and the next day received eggplants, onions, red bell peppers, tomatoes, okra and sweet corn. Everything looked beautiful with no browns spots, just perfectly picked in its peak ripeness.
There were four large ears of corn that I cooked them right away for our dinner. They were extra-sweet, just as summer corn should be. I used some of the other veggies for an end-of-summer dish:
I sauteed one of the onions in a wok, added the chopped okra and tomatoes and then peeled and chopped one of the eggplants. With a little salt, once the veggies softened, this was an incredibly rich-tasting and hearty dish, that can be eaten alone or as a side.
I still have a few other veggies from the box that I can use for other dishes but in the meantime my family and I are enjoying the cooked vegetables. If you want to get your family to eat more produce and try a variety of dishes the Local Farm Box is perfect with the right amount of produce that won’t overwhelm you, but will give you the chance to cook enough healthy meals to keep your family eating well.
