A few weeks ago I bought a spaghetti squash, roasted it and loved it! I ate the whole thing, I just added a little buttery spread with Omega 3’s. This roasted spaghetti squash with parmesan cheese was so delicious!
Or you can add pasta sauce instead!
Directions:
1. Preheat your oven to around 400 degrees.
2. Cut a Spaghetti Squash in half (not so easy)
3. Scoop out the seeds and add a little Smart Balance spread. Roast on a cookie sheet (I put Reynolds’ Parchment/Foil under it. Roast for 1 hour.
4. Scoop out the flesh– it will look like spaghetti strands! Add some parmesan cheese and serve!
Hint — if you have a very picky eater, you can tell them it’s really spaghetti! Or give them a bite and then tell them it’s squash!
