I love entertaining all year round, but especially in the summer. It’s so easy to whip us something grilled for our main dish and then add some colorful veggies for my family to enjoy. Since my children grumble a lot when I make anything, I try to include fresh veggies and let my kids dip them into my favorite hummus brand, Sabra with our meals. It’s often the first thing I have on the table and they devour it. Recently I picked up some Sabra Roasted Red Pepper Hummus and built dinner around it. .
For one of our recent summer dinners, I decided to grill some chicken and serve it over rice, along with a fresh veggie plate with Sabra Roasted Red Pepper Hummus. I went over to Walmart to pick up my Sabra Roasted Red Pepper Hummus.
It was right in the section near the refrigerated cheese and meats. I decided to get the 17 oz family size…because I knew that my family would consume the entire package.
I came home and started cutting up my veggies and prepping my chicken and rice. For my chicken, I used some marinade I had in the fridge (lemon-garlic) and broiled it on parchment paper. For the rice, I made my usual brown basmati rice in the Instant pot (recipe link here).
While I usually serve our veggies raw, I decided to blanch them a little. The veggies I usually offer my kids are grape tomatoes, baby carrots, and cucumbers. I decided to serve broccoli, cauliflower, and carrots with the Sabra Roasted Red Pepper Hummus. Since broccoli and cauliflower are a little tougher when they are raw, blanching them would keep the crispness, but make them easier and tastier to dip into the hummus. What that means is that you boil some water, dip your veggies in for about a minute and then plunge them into ice water quickly and then let them drain. This makes the veggies taste even better and brings out the flavor! After the cauliflower was blanched, the color is darker and the flavor is stronger.
I find it makes the carrots sweeter.

I can safely say that this dinner was a hit!
My son even put the Sabra Roasted Red Pepper Hummus on his grilled chicken! Kids! This was coming from Mr. Picky Eater 1.0. Picky Eater 2.0 loved it too.
