Salsa Chicken is one of the first things I ever made in my slow cooker. However since I got my Instant Pot, it’s cut the time from 3:30 to 30 minutes. Which is HUGE and such a timesaver for me as a busy, working parent. It tastes just as good and I love that I can really get dinner on the table much quicker. Instead of slow cooking, I cook the chicken in the pressure cooker setting. And it’s delicious!
To make Salsa Chicken in the Instant Pot, you’ll need a whole chicken or chicken breasts. I prefer a whole chicken because it’s a better value for your money. The downside is that you have to take the chicken off the bone, which can be time consuming.
Ingredients
Whole chicken — since the whole chicken I found at the supermarket was on the smaller side, I actually got two of them to cook with and they both fit into my Instant Pot.
1 large jar of salsa. I always look for salsa that is minimally processed because I like to eat as clean as possible, most of the time.
Water – after you pour your salsa into the Instant Pot, fill up the salsa jar with water and pour into Instant Pot
Instructions:
Cut up chicken into pieces and place in Instant Pot
Pour in whole jar of salsa
Refill the empty salsa jar with water and pour it into Instant Pot
Put the top of the Instant Pot on and lock.
Set the Instant Pot on the High Pressure setting for Poultry and add 5 minutes (so it should be on for 30 minutes).
After it finishes cooking, let the steam out (quick release) and then open the Instant Pot.
Let it cool and then take the meat off the bone.
You can serve your Salsa Chicken as a burrito filling or in a burrito bowl. You can also use it in a quesadilla, taco salad – anything you want.
If you are doing the Whole 30, use a compliant salsa and leave off the rice and cheese — add more veggies.
