Whether you spell it Hamantachen, hamentashen, or hamentashan, it’s not Purim without these cookies! What’s your favorite filling? A little natural fruit spread and coconut make a delicious filling for hamentashen cookies for Purim. One of the fun combinations I came up with was cherry and coconut. My kids went crazy over them!! Note, you’ll need to make your dough the DAY before you want to bake these! Enjoy these Cherry Coconut Hamentashen Cookies for Purim!
Basic Recipe:
Ingredients:
4 cups all-purpose flour
4 teaspoons baking powder
1/2 tablespoon salt
1 1/2 cup sugar
2 sticks or 1/2 pound of unsalted butter, cold and firm
2 eggs
Grated rind of 2 oranges
3 tablespoons orange juice
Filling: Cherry all fruit spread (no sugar added and flaked coconut)
Instructions:
Mix together dry ingredients in a mixer
Add butter and keep mixing
Add eggs, orange rind and orange juice.
Finish mixing dough and chill overnight.
The next day, set up the fillings you want to use.
Preheat oven to 400 degrees.
Roll out dough — if dough is too cakey, add a little oil. If the dough is too wet, sprinkle some flour on it.
Cut circles in the dough, using a glass..
Add a teaspoon of cherry all fruit spread. Sprinkle shredded coconut on top.
Pinch sides up into a triangle shape.
Bake at 400 degrees for 14-15 minutes.
